I DARE SAY one of the very first things Filipinos look for when they go back to the Philippines is fishball. In a recent vacation, my boyfriend (who didn't go back for five years) was definitely on a lookout. Seeing the tiny cart with its makeshift stove, blackened pan and assortment of condiments delighted him so much he literally jumped from the moving tricycle to have his fishballs. From my own experience, standing in front of "manong" again, watching him stir fishballs, kikiam, squidballs and chickenballs in the heated afternoon is just part of the Filipino psyche, a part of who I am and what I do. Hearing the balls sizzle in hot oil is music while I wait. Selecting a stick and starting to fish those balls out (usually ten on a stick at a time) is exciting. Then finally pouring the sweet and spicy sawsawan onto my plate is sight for sore eyes. (There are certain fishball-an) where you can dip your stick into the bottle.) And when I bite on it -- the soft, chewy texture, the sauce dripping on my chin, the oil, the fish taste, it's just aaaaahhh. I'm back for seconds, thirds and fourths.
